Sunday is Cooking Day

Or maybe I should say Sun-Night. I didn't really do anything productive during the day. Sunday Jer and I came back home from visiting relatives in the Hudson Valley. I got to meet our new niece and can I just say she's absolutely darling. She's one of those kids you don't have to lie to the parents about how beautiful she is because she actually is that beautiful.



Anywho...on our way home we stopped at one of the many farm stands and picked up some peaches. I've been dying for fresh peaches and I'm a fool for fresh produce so we also picked up some squash and some plums. I wanted more (a lot more) but I had to stop myself because I didn't want to buy so much that we couldn't use it before it spoiled. With the squash I made Cream of Squash Soup and with the peaches I made a Peach Cobbler. After that I got down with my bad self and made Peach Butter.



Here's how to make the Squash Soup in case you get an overwhelming urge:

4 small squashes cut into bite sized pieces

2 cups hot water- to this add 4 chicken bullion cubes

2 cups white wine (whatever you have lying around, I used Vampire Pinot Grigio... it worked well, gave it almost a Marsala type smell)

2 small onions, diced

2 Tablespoons butter (why yes, all of my recipes do have butter in them... thanks for asking)

1 cup heavy cream (I'm sure light or half and half would work but this is what I had on hand)

Salt and pepper to taste and a shake of nutmeg.

Frizzle the onions in the butter until caramelized. Add all but a large handful of your squash and give it some color. Once it's looking good add the water/bullion cubes and then the wine. Once the squash has cooked to almost the mushy stage give it a wizz with the hand blender. Dump in the rest of the squash, the cream and the sour cream. Cook until heated through and your done!


Here's dessert... peach cobbler. We ate half of it the first night!
